凤梨酥


怪~几乎每每拍凤梨酥的照片
出来的颜色都很怪。这一次又给老娘
遇到雨天,真的是怪上加怪 (-.-;)


拌好的面团有点干,包馅料
的时候会裂,所以,这次我把温度
给调低了一些,成品还算满意




找到两个有放炼乳的食谱,比较
过后,选了甜度比较底的来做,出来的
成品口感其实跟之前做的两款差不多
只是味道方面多了淡淡的炼乳香


  • 无盐奶油274g,糖粉10g,盐1/8tsp
  • 打至微发(淡黄色)
  • 分次加入蛋黄2个,炼乳80g,搅匀
  • 拌入奶粉80g,乳酪粉28g
  • 筛入低筋面粉480g,拌成团
  • 盖着,静置30分钟
  • 分36个,每个约27g
  • 取一份面团,压扁,包入凤梨馅20g
  • 收紧成球状,压入模型里
  • 放入已预热的烤箱,中上层
  • 以190度烤21分钟
  • 食谱取自这里

  9. 你上几个月post了一次黄梨酥,就激发我去做黄梨饼,因为我很爱黄梨饼,又看到你做到这样美。我那是是要做这个西方台湾版的,sekali,因为没有模,所以最后变花朵跑出来哈哈。。。
    没有怪怪,有美美啦。。。真的。。。喜欢最后一张

      的确要买很多模,要不。。只要一个模
      也可以做出类似的凤梨酥(可以看回我第二篇凤梨酥)
